White Bean, Corn and Tomato Bread Salad

Ingredients

  • 1 1/3 cup cooked white beans
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  •  black pepper to taste
  • 1 tablespoon water
  • 4 slices whole grain or multi grain bread cut up into 1 inch cubes
  • 1 cup fresh corn cut off the cob
  • 3 cups chopped tomatoes
  • 1 cup sliced celery
  • 1/2 cup leaves basil
  • 1/4 cup walnut pieces
  • 1 peeled garlic clove
  • 2 tablespoons balsamic vinegar
 

Method

  1. In a food processor combine basil, walnuts, garlic, vinegar, olive oil, salt, pepper and water. Process for 1 minute. Set aside.
  2. In a large bowl combine white beans, bread, corn, tomatoes and celery. Gently toss salad with dressing and serve immediately.

Notes

  1.  Round out with 3 ounces of cooked fish, skinless poultry or lean meat and 1 cup of steamed vegetables with a spritz of lemon juice or balsamic vinegar.
