Warm Carrot Soup
This delicious soup is a great way to start any meal. As an additional benefit the carrots provide large doses of vitamin A.

Ingredients
- 2 cups spring onions chopped
- 3 cups peeled and chopped carrots
- 1/2 cup peeled and diced potato
- 1/4 teaspoon salt
- black pepper to taste
- 4 tablespoons lowfat sour cream
Method
- Place potato in saucepan and fill with water. Bring to boil, reduce heat to a simmer and cook till potato is tender (about 10 minutes). Drain water.
- Fill a medium pot with water, add spring onions and carrots. Bring to a boil. Reduce heat to low and simmer until carrots are tender, about 5 minutes. Drain carrots and spring onions, puree in blender with potatoes, salt, pepper and 2 cups of water, till very smooth (about 3 minutes).
- Heat soup over a low flame stirring often. Garnish with sour cream and serve.
