Warm Carrot Soup

This delicious soup is a great way to start any meal. As an additional benefit the carrots provide large doses of vitamin A.

  • Servings: Makes 4 servings (yields 3 1/2 cups)

  • Total time: 25 minutes
 

Ingredients

  • 2 cups spring onions chopped
  • 3 cups peeled and chopped carrots
  • 1/2 cup peeled and diced potato
  • 1/4 teaspoon salt
  •  black pepper to taste
  • 4 tablespoons lowfat sour cream
 

Method

  1. Place potato in saucepan and fill with water. Bring to boil, reduce heat to a simmer and cook till potato is tender (about 10 minutes). Drain water.
  2. Fill a medium pot with water, add spring onions and carrots. Bring to a boil. Reduce heat to low and simmer until carrots are tender, about 5 minutes. Drain carrots and spring onions, puree in blender with potatoes, salt, pepper and 2 cups of water, till very smooth (about 3 minutes).
  3. Heat soup over a low flame stirring often. Garnish with sour cream and serve.
