Steel Cut Oats with Apple and Ginger

Ingredients

  • 1/8 teaspoon salt
  • 1 cup steel cut oats (regular or quick)
  • 2 apples (any variety), cored and shredded, skin intact
  • 1/2 teaspoon dried ginger
  • 1 tablespoon maple syrup
  • 4 tablespoons chopped walnuts
 

Method

  1. Bring 3 cups of water to boil in a medium pot. Add salt and stir in oats, apple, ginger and maple syrup.
  2. Cook oatmeal according to the package directions.
  3. Divide into serving bowls and top with walnuts.

Notes

  1.  The total time depends on whether you use quick or regular oats
  2.  For a complete breakfast, round out with one cup of nonfat milk and one cup of mixed berries
