Steak and Sugar Snap Salad

This is a fantastic warm weather meal.

Ingredients

  •  vegetable oil cooking spray
  • Marinade: 2 tablespoons rice wine vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon fresh ginger minced
  • 2 teaspoons fresh garlic minced
  • 1 onion sliced
  • 3/4 lb. flank steak, pierced repeatedly with fork and then sliced in 1/4 inch slices against the grain
  • 2 cups thinly sliced sugar snap peas
  • 4 cups salad greens
  • 2 teaspoons rice wine vinegar
  • 1 teaspoon sesame oil
  • 1/4 teaspoon salt (1/8 kohlrabi mixture 1/8 meat after cooking)
  •  black pepper to taste
 

Method

  1. Mix marinade ingredients together and marinate sliced steak while preparing other ingredients for about 10-15 minutes
  2. Heat skillet over medium heat.
  3. Spray skillet with vegetable oil spray and cook onion till translucent about 3 minutes.
  4. Add flank steak and cook stirring often till just browned about 3 minutes. Remove from heat and season with 1/8 teaspoon salt.
  5. In large bowl combine sugar snaps, vinegar, oil, 1/8 teaspoon salt and pepper.
  6. Add steak to sugar snap mixture.
  7. Just before serving add greens, toss lightly, portion and serve immediately.

Notes

  1.  For a balanced meal, round out with 1 whole grain roll or slice of whole wheat bread and 1 cup of steamed mixed vegetables with a spritz of lemon and balsamic vinegar.
