Steak and Sugar Snap Salad
This is a fantastic warm weather meal.

Ingredients
- vegetable oil cooking spray
- Marinade: 2 tablespoons rice wine vinegar
- 1 tablespoon sesame oil
- 1 teaspoon fresh ginger minced
- 2 teaspoons fresh garlic minced
- 1 onion sliced
- 3/4 lb. flank steak, pierced repeatedly with fork and then sliced in 1/4 inch slices against the grain
- 2 cups thinly sliced sugar snap peas
- 4 cups salad greens
- 2 teaspoons rice wine vinegar
- 1 teaspoon sesame oil
- 1/4 teaspoon salt (1/8 kohlrabi mixture 1/8 meat after cooking)
- black pepper to taste
Method
- Mix marinade ingredients together and marinate sliced steak while preparing other ingredients for about 10-15 minutes
- Heat skillet over medium heat.
- Spray skillet with vegetable oil spray and cook onion till translucent about 3 minutes.
- Add flank steak and cook stirring often till just browned about 3 minutes. Remove from heat and season with 1/8 teaspoon salt.
- In large bowl combine sugar snaps, vinegar, oil, 1/8 teaspoon salt and pepper.
- Add steak to sugar snap mixture.
- Just before serving add greens, toss lightly, portion and serve immediately.
Notes
- For a balanced meal, round out with 1 whole grain roll or slice of whole wheat bread and 1 cup of steamed mixed vegetables with a spritz of lemon and balsamic vinegar.
