Scallops with Grapefruit and Greens

Ingredients
- 1 grapefruit sectioned and roughly sliced
- 1/4 teaspoon salt (1/8 teaspoon for salad,1/8 teaspoon for scallops)
- juice of 1 lime
- 1/2 cup cilantro
- vegetable oil cooking spray
- 1 lb. sea scallops sliced in half to make two thinner round pieces out of each scallop
- 2 cups salad greens
- black pepper to taste
Method
- Heat large heavy bottom skillet over medium heat.
- In large bowl combine grapefruit sections, 1/8 teaspoon salt, lime and cilantro.
- Spray hot skillet with vegetable oil spray and place scallops in pan. As soon as you put the last scallop in flip the first scallop (if you would prefer to work slowly cook 1/2 of the scallops at a time). As soon as you flip the last scallop remove the first scallop to a clean plate off of the heat. Scallops should only be cooked only 30 seconds on each side. Season scallops with 1/8 teaspoon salt and black pepper to taste.
- Add scallops to grapefruit mixture, toss in salad greens and serve.
Notes
- For a balanced meal, round out with 1 whole grain roll, 1 cup of steamed vegetables with 1 tablespoon of olive oil and a spritz of balsamic vinegar.
