Meatballs in Tomato Sauce

Succulent turkey meatballs can be served over whole grain pasta or on their own.

Ingredients

  • 1 large onion grated and drained
  • 2 cloves crushed garlic
  • 1 lemon
  • 4 tablespoons non-fat Greek style yogurt
  • 1 pound ground turkey meat
  • 1/2 teaspoon salt (1/4 meatball, 1/4 sauce)
  •  black pepper to taste
  • 1 teaspoon ground cinnamon
  •  pinch allspice
  • 1/3 cup pinenuts
  •  vegetable oil cooking spray
  • 3 cups chopped tomatoes
  • 1 1/2 teaspoons sugar
 

Method

  1. In a large bowl combine onion, meat, salt, pepper, cinnamon, pinenuts and allspice. Make into meatballs 1 inch diameter.
  2. In food processor combine tomatoes, 1/4 teaspoon salt, sugar and garlic. Set aside.
  3. Preheat oven to 375. Heat a large oven proof heavy bottom skillet over medium heat. Spray with vegetable oil spray. Place meatballs in skillet and cook and turn till brown on all sides, about 5 minutes.
  4. Pour tomato over the meatballs, squeeze the juice of one lemon over entire dish and bake for 30 minutes.
  5. Serve meatballs garnished with yogurt.

Notes

  1.  Round out with a cup of whole grain pasta and vegetables with a spritz of balsamic vinegar
