Meatballs in Tomato Sauce
Succulent turkey meatballs can be served over whole grain pasta or on their own.

Ingredients
- 1 large onion grated and drained
- 2 cloves crushed garlic
- 1 lemon
- 4 tablespoons non-fat Greek style yogurt
- 1 pound ground turkey meat
- 1/2 teaspoon salt (1/4 meatball, 1/4 sauce)
- black pepper to taste
- 1 teaspoon ground cinnamon
- pinch allspice
- 1/3 cup pinenuts
- vegetable oil cooking spray
- 3 cups chopped tomatoes
- 1 1/2 teaspoons sugar
Method
- In a large bowl combine onion, meat, salt, pepper, cinnamon, pinenuts and allspice. Make into meatballs 1 inch diameter.
- In food processor combine tomatoes, 1/4 teaspoon salt, sugar and garlic. Set aside.
- Preheat oven to 375. Heat a large oven proof heavy bottom skillet over medium heat. Spray with vegetable oil spray. Place meatballs in skillet and cook and turn till brown on all sides, about 5 minutes.
- Pour tomato over the meatballs, squeeze the juice of one lemon over entire dish and bake for 30 minutes.
- Serve meatballs garnished with yogurt.
Notes
- Round out with a cup of whole grain pasta and vegetables with a spritz of balsamic vinegar
