Corn Chowder

Ingredients

  • 4 ears corn cut off the cob
  • 1 medium onion chopped
  • 1 medium potato diced into 1/2 inch cubes
  • 1 teaspoon fresh thyme
  • 3 cups unsweetened almond milk
  • 1/16 teaspoon salt
  • to taste black pepper
 

Method

  1. Preheat oven to 375 degrees.
  2. Combine onion and potato on a baking sheet and lightly coat with oil spray.
  3. Cook till onion and potato are tender approximately 10 minutes.
  4. In pot combine corn, almond milk, thyme potato and onion.
  5. Heat till soup just begins to simmer stirring frequently.
  6. Add salt and pepper and serve.
