Chopped Salad with Rotisserie Chicken
With the addition of a whole grain roll, this salad makes a satisfying and complete meal

Ingredients
- 2 cups sliced rotisserie chicken (skin removed)
- black pepper to taste
- 2 tablespoons finely chopped red onion
- 2 cups fennel, thinly sliced
- 2 cups celery, thinly sliced
- 4 cups romaine lettuce, chopped
- 1/2 cup finely chopped herbs can include basil, chives, parsley, and Italian parsley
- 2 tablespoons good quality olive oil
- 4 tablespoons red wine vinegar
- 1/8 teaspoon salt
Method
- Combine olive oil, vinegar, salt, pepper and red onion to make dressing. Set aside.
- Combine chicken, fennel, celery, lettuce and herbs.
- Gently combine dressing and salad and serve.

- Round this meal out with a whole grain roll or one slice of whole wheat bread.
