Chicken Salad with Marinated Grapes and Red Onions

Ingredients

  • 1 pound rotisserie chicken cut off the bone skin removed
  • 1 1/2 cups grapes cut in half
  • 1/4 cup finely sliced red onion
  • 4 cups salad mix
  • 1 tablespoon olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon salt
  •  black pepper to taste
 

Method

  1. In medium sized bowl mix together oil, vinegar, salt and pepper. Add grapes and red onions, let marinate while preparing the rest of the salad.
  2. In a large bowl combine chicken and lettuce. Dress with grape mixture and serve.

Notes

  1.  Round out with a cup of whole grain pasta and 1 cup of steamed vegetables with a spritz of balsamic vinegar.
