Chick Pea Fritters on Whole Wheat Cous Cous with Grapes and Almonds

Ingredients

  • 1 cup whole wheat cous cous
  • 1/2 cup chopped fresh mint
  • 1/4 cup finely chopped red onion
  • 1 tablespoon olive oil
  •  cayenne to taste
  •  vegetable oil cooking spray
  • 4 tablespoons greek style yogurt
  • 1 1/2 cup cooked chick peas canned, drained and rinsed or cooked from dry
  • 1 cup parsley
  • 1/4 cup chives
  • 1 cup grapes, cut in half
  • 1/4 cup almonds rough chopped and toasted
  • 1/2 teaspoon (1/4 for fritter, 1/4 for cous cous)
  • 1/8 teaspoon cinnamon
  • 1/8 teaspoon cumin
 

Method

  1. Place cous cous, 1/4 teaspoon salt, cinnamon and cumin in a large bowl. Bring 1 cup of water to a boil. Pour boiling water over cous cous and cover bowl tightly with plastic wrap. Let sit covered for 5 minutes.
  2. Remove plastic wrap and gently fluff cous cous with a fork. Add cayenne if desired, grapes, almonds, mint, red onion and olive oil. Set aside.
  3. Heat heavy bottom skillet over medium heat. In food processor combine chick peas, 1/4 teaspoon salt, chives and parsley till smooth, about 1 minute.
  4. Form chick pea mixture into 8 fritters. Spray hot pan with vegetable oil spray and cook on each side till brown (about 3 minutes per side.)
  5. Serve fritter on cous cous and garnish with yogurt.

Notes

  1.  For a balanced dinner, round out this meal with a 2 cups of mixed salad and around 100 calories of dressing
