Cherry Tomato and Avocado Salad

This refreshing salad is especially good in the summer and early fall when tomatoes are at their best.

Ingredients

  • 2 cups cherry tomatoes halved
  • 1 avocado diced
  • 1 cup celery sliced
  • 1 cup Italian parsley
  • 2 tablespoons cider vinegar
  • 1 tablespoon olive oil
  • 1/8 teaspoon salt
  •  black pepper to taste
 

Method

  1. In medium size bowl combine tomatoes, avocado, celery and Italian parsley.
  2. Dress with vinegar, olive oil, salt and pepper.

Notes

  1.  For a complete meal, round out with a 1/2 cup of whole grain pasta and 3 - 4 ounces of cooked fish, shellfish, lean meat, skinless poultry, or 4 oz. tofu or a cup of beans.
