Cherry Tomato and Avocado Salad
This refreshing salad is especially good in the summer and early fall when tomatoes are at their best.

Ingredients
- 2 cups cherry tomatoes halved
- 1 avocado diced
- 1 cup celery sliced
- 1 cup Italian parsley
- 2 tablespoons cider vinegar
- 1 tablespoon olive oil
- 1/8 teaspoon salt
- black pepper to taste
Method
- In medium size bowl combine tomatoes, avocado, celery and Italian parsley.
- Dress with vinegar, olive oil, salt and pepper.
Notes
- For a complete meal, round out with a 1/2 cup of whole grain pasta and 3 - 4 ounces of cooked fish, shellfish, lean meat, skinless poultry, or 4 oz. tofu or a cup of beans.
