Carrot, Apple and Pecan Salad

Ingredients

  • 4 cups grated carrot
  • 2 cups grated apple
  • 1/2 cup pecans, toasted
  • 2 tablespoons vegannaise or light mayonnaise
  • 4 teaspoons sherry vinegar
  • 1/2 teaspoon salt
 

Method

  1. Toss all ingredients together and serve. If not serving immediately toss all ingredients together except for the pecans, refrigerate and add pecans right before serving so they remain crisp.

Notes

  1.  For a balanced dinner, add 3 ounces of cooked fish, skinless poultry or lean meat and a whole grain roll.
