Beef and Lentil stew

Ingredients
- vegetable oil cooking spray
- 4 cups water
- 3 tomatoes chopped or 1 can diced tomatoes no salt
- 1/4 teaspoon salt
- 1 onion, chopped
- 3 carrots peeled and sliced
- 1 cup green or brown lentils
- 12 oz. lean beef sirloin cut into 1 inch pieces
- 4 cloves minced garlic
- 1 tablespoon chopped rosemary
- 1 tablespoon minced ginger
- 1 tablespoon curry powder
Method
- Heat heavy bottom stock pot over medium heat.
- Spray beef with vegetable oil spray and place in the same hot pot turning often till browned on all sides.
- Add onion, carrot, lentils, water, garlic, rosemary, ginger, curry powder and tomatoes. Cook till beef and lentils are tender (about one hour).
- Stir in salt before serving.
