Beef and Lentil stew

The combination of delicious flavors in this healthful soup make for a satisfying meal.

Ingredients

  •  vegetable oil cooking spray
  • 4 cups water
  • 3 tomatoes chopped or 1 can diced tomatoes no salt
  • 1/4 teaspoon salt
  • 1 onion, chopped
  • 3 carrots peeled and sliced
  • 1 cup green or brown lentils
  • 12 oz. lean beef sirloin cut into 1 inch pieces
  • 4 cloves minced garlic
  • 1 tablespoon chopped rosemary
  • 1 tablespoon minced ginger
  • 1 tablespoon curry powder
 

Method

  1. Heat heavy bottom stock pot over medium heat.
  2. Spray beef with vegetable oil spray and place in the same hot pot turning often till browned on all sides.
  3. Add onion, carrot, lentils, water, garlic, rosemary, ginger, curry powder and tomatoes. Cook till beef and lentils are tender (about one hour).
  4. Stir in salt before serving.
