Beef and Green Bean Stir Fry with Garlic and Ginger

Ingredients

  • 1 tablespoon minced ginger
  • 1/4 cup fresh hot peppers, chopped
  • 1 tablespoon rice vinegar
  • 1 tablespoon minced garlic
  • 1 pound beef chuck mock tenderloin
  • 4 cups green beans
  • Marinade Ingredients 
  • 1/3 cup rice vinegar
  • 1/8 cup sesame oil
  • 2 tablespoons orange juice
  • hot sauce ingredients 
 

Method

  1. Mix marinade ingredients and place in a shallow dish, add sliced meat and if it is not covered by marinade, stir often (you can let it marinate at room temperature while you prepare other ingredients or in the refrigerator for up to 4 hours).
  2. Preheat 2 lage skillets over medium flame.
  3. Lightly coat green beans with oil spray and put in hot pan, stir and cook for 4-5 minutes stirring often until they reach desired tenderness. After 2 minutes of cooking the beans by themselves add garlic and ginger to the beans while they finish cooking- use a spatula to stir the garlic and ginger so it does not burn.
  4. Drain meat and cook for 3 minutes stirring constantly.
  5. Combine beans and beef and serve.
  6. Serve with hot sauce if desired.
  7. Make hot sauce by combining fresh hot peppers and rice vinegar in a food processor for 2 minutes.

Notes

  1.  Beef chuck mock tender is cut from above the blade bone. It is naturally boneless, consisting of a single tapering muscle with minimal fat.
