Beef Salad with Plums and Roasted Garlic, Basil, Balsamic dressing

Ingredients

  • Marinade: 1 plum
  • 2 tablespoons roasted garlic, peeled of skin
  • 4 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • 2 tablespoons water
  • 1/4 teaspoon salt
  • 2 cups mixed greens
  • 2 plums, thinly sliced
  • 1/2 cup chopped onion
  • 1/2 cup white vinegar
  • 1/4 cup balsamic vinegar
  • 2 garlic cloves
  • 1/2 teaspoon salt
  •  Ground pepper
  • 1 pound rib-eye steak, portioned into four ½-inch- to ¾-inch-thick steaks
  • Dressing: 1 cup basil
 

Method

  1. To make marinade, puree plum, onion, white vinegar, balsamic vinegar, raw garlic, salt and pepper.
  2. Pour marinade into a large shallow plate that all steaks can fit on without being on top of each other.
  3. Place steaks in marinade. Coat both sides, spooning marinade on the top of steaks. 4. Refrigerate for 20 minutes to 3 hours.
  4. To make dressing, puree basil, roasted garlic, balsamic vinegar, olive oil, water and salt.
  5. Preheat skillet over medium-high
  6. Place beef in hot skillet cooking each side for 1½ minutes for medium rare; 2½ minutes for medium; 3 minutes for well done.
  7. Remove beef from skillet and let rest for 1 minute before slicing.
  8. Thinly slice beef.
  9. Toss salad greens, plums and beef with salad dressing. Serve immediately.

Notes

  1.  This salad can be rounded out nicely with a whole grain roll.
