Asian Pear and Cashew Slaw

Ingredients

  • 4 cups thinly sliced green cabbage
  • 1/4 teaspoon salt
  • 4 tablespoons cider vinegar
  • 1 teaspoon nut oil, such as hazelnut or walnut, or olive oil
  • 1 large Asian pear, sliced
  • 1 tablespoon fresh chives
  • 1/2 cup cashews toasted
 

Method

  1. Combine cabbage, salt, vinegar and oil.
  2. Add Asian pear to cabbage mixture (you can store the salad at this point for up to 24 hours).
  3. Just before serving, toss in cashews.
